JOB SUMMARY
Primarily responsible for the management and daily operation of the Lodge restaurant, bar and catering facilities. Responsible for safe and efficient Food & Beverage operations; selection, hiring and training of front-of-house Food & Beverage department personnel and labor cost control, and producing a consistently high-quality dining experience according to Lodge standards. Responsible in coordinating all aspects of an event held at the Lodge ensuring guest satisfaction. Ensures profitability while maintaining high standards of product and service.
ESSENTIAL JOB FUNCTIONS
Major Activities (Typical Duties/Responsibilities):
/ Leads budget and forecast preparation for the business unit and provides information supporting the long-range planning activities
/ Work closely with all departments to ensure all details of an event are covered. Including, but not limited to: menus, proper staffing, budget, and room set-up
/ Achieve goals set forth by upper management in regards to revenue generated through conference fees and rentals
/ Perform periodic site inspections for potential or upcoming events
/ Responsible for special events including but not limited to the following:
/ On-site contact for special events
/ Providing information and coordinating with all departments about the special events
/ Maintain contact with the client to ensure all needs are met and arranging payments
/ Coordinate with the reservations office to ensure proper room blocks for special events
/ Ensure excellent guest service is provided for all events and conduct evaluations of services provided after the completion of an event
/ Responsible for directing and training all Food & Beverage and front of house management and staff
/ Responsible for achieving revenue goals set for events and catering, including but not limited to, the following:
/ Negotiate the type and costs of services to be provided, within budget
/ Coordinate and collect payments from clients after completion of events
/ Coordinating voucher groups with the Event Manager and Front Desk Manager
/ Maintaining appropriate and detailed information for each function/event
/ Advise senior management on matters related to Restaurant operation and event coordination and make recommendations as needed
/ Supervises the day-to-day activities of staff; manages and supervises personnel including goal setting, training, performance evaluations and reviews
/ Directs and trains Food & Beverage staff to provide the highest possible level of Responsible for a smooth working environment between the kitchen and event staff and front of the house staff
/ Responsible for the implementation, maintenance and training for Serve-Safe (food safety) and TAP (alcohol management) policies at the Lodge
/ Food quality and customer service
/ Participates in menu design and sets menu pricing with input from the Executive Chef and General Manager
/ Ensures the Food & Beverage product served is of consistently high quality and is delivered to the customer in a timely manner
/ Maintain quality standards for environment, service and safety according to the guidelines of the Lodge.
/ Investigate and resolve complaints regarding food quality or service
/ In coordination with the General Manager and Executive Chef, responsible for maintaining reasonable Food & Beverage costs and reasonable labor costs in the dining room and with special events, in keeping with the Lodge budget and guidelines
/ Ensures all Food & Beverage furniture and equipment is properly and safely maintained, in conjunction with the Maintenance Department
/ Performs other duties as are appropriate and as assigned
Skills + Abilities:
/ Extensive knowledge related to professional catering/convention services
/ Knowledge of Food & Beverage ordering, inventory procedures and cost control practices
/ Knowledge of proper food handling and health standards. (Alaska Food Worker card)
/ Knowledge of alcohol management (TAP card)
/ Must have superior organizational and follow-up skills and be detail-oriented
/ Ability to maintain accurate records and to prepare and submit comprehensive reports
/ Ability to work independently with minimal supervision, as well as a team member
/ Ability to make decisions, solve problems and exercise good judgment; ability to work under pressure and prioritize workload
/ Excellent time management skills with the ability to handle multiple tasks and work effectively under pressure
/ Proficiency in the use of computers, Food & Beverage software and industry-related software. Strong Microsoft Office suite skills
/ Thorough knowledge of management principles of the foodservice business, including service standards, accounting practices, and cost control practices
/ Knowledge of Food & Beverage ordering, inventory procedures and cost control practices
/ Excellent oral and written communication skills to promote effective internal and external communication between the Lodge, its employees and the general public
/ Excellent interpersonal skills and professional demeanor; ability to work effectively and cooperatively with all levels of management and staff, affiliated company employees and outside business associates
/ Ability to organize, plan, motivate and direct others in a team environment in the achievement of the Alaska Collection’s goals and objectives
/ Strong leadership, management and supervisory skills
/ Knowledge of, and effective use of, sales and marketing skills
/ Willing to work long hours, on various shifts, and on holidays and weekends as well as flexibility with your schedule
Physical Abilities:
/ Must be able to walk, sit and stand on hard surfaces for extended periods of time
/ Must be able to kneel, bend and twist at the waist on a regular basis
/ Must be able to reach at, above and below shoulder height with regular frequency
/ Must be able to push, pull, carry and lift objects weighing up to 50 pounds on a regular basis, and greater weights on an occasional basis
/ Must be able to maintain balance and maneuver in crowded spaces on a regular basis
/ Must possess sufficient fine and gross motor skills to operate computers and other equipment as required
Minimum Qualifications:
/3 to 5 years experience; or any combination of education, training and experience that provides the necessary skills, knowledge and abilities
